Loaded Scallop Ceviche

Peruvian food is some of my favorite in the world! From bright, refreshing ceviche to comforting aji de gallina and lomo saltado, the country’s cuisine includes really everything you could ever crave.

I’m calling this “loaded” because instead of including just avocado, red onion, or bell pepper, I included it all. Peruvian ceviche is known for using simple ingredients that make bold, flavorful dishes. And while I like to do that many times, sometimes it also works to put everything into one bowl, dip a chip into it, and call it dinner. One of my favorites!

Loaded Scallop Ceviche

This bright, spicy Peruvian dish is so refreshing and flavorful for summer (or really any season) and becomes a whole meal when instead of picking in one mix-in, you pick all of them!

Ingredients
  

  • 2 cups raw high quality fish I am using wild caught Patagonia Scallops
  • ¾ avocado diced
  • ½ cup bell pepper or sweet mini peppers diced
  • ½ cup red onion diced
  • ½ cup cilantro diced
  • 2 T serrano diced with seeds (adjust quantity and inclusion of seeds based on heat preference, could substitute with jalapeno)
  • 1.5 oz fresh squeezed lime juice
  • 1 tsp pink himalayan sea salt

Instructions
 

  • Combine fish, red onion, lime juice, salt, and cilantro in a bowl, cover, and refrigerate for 30 min- 1 hr.
  • Mix in avocado, bell pepper, and serranos. Add more salt if necessary.
  • Enjoy with plantain chips or chip of your choice!
