My mom has made a ton of tomato pie recipes over the years, and this one if our family favorite! It’s so cheesy and cravable – it takes all your favorite flavors of summer (at least mine!): tomatoes and basil and layers with onions, cheese, bacon, and more cheese!
The mayonnaise might sound weird, but just trust it – it’s acts like a binder with the cheese and brings together the whole top for a toasty, cheesy crust.
If you see found this under Vegetarian recipes and see the bacon listed – do not fret! It is completely optional. You will still love it left out.
Southern Tomato Pie
All your favorite flavors of a summer caprese salad, baked into an ooey gooey, cravable pie!
2large ripe tomatoessliced into ½ inch thick slices
Full fat fresh mozarellacut into ½ inch thick slices (to cover the bottom, about 6)
1cupfresh basil
4clovesgarlic
½yellow oniondiced
1cupgrated low moisture mozzarella cheesewe did use pre shredded for this
¾cupfreshly grated parmigiana reggiano
½cupfull fat mayonnaise
3slicescooked baconchopped (optional)

Instructions
Pre-bake the pie crust until lightly golden. Be sure to poke a few holes in it to
Slice tomatoes, salt, and rest on a paper towel to release excess moisture
Sautee onions on medium-low heat until very translucent
Using a food processor, roughly chop basil and garlic together (you don’t need any oil)
In a bowl, combine low fat mozzarella, parm, and mayo until it is a consistency you can spread. Add more mayo if you need to.
Layers in order, everything should be one single layer so if you have extra tomato or mozzarella, you don’t need to try to fit it: 1. Sprinkle of breadcrumbs, 2. Mozzarella, 3. Tomato (Partially overlap in a circle to fit more), 4. Sauteed Onions, 5. Bacon, 6. Chopped Basil and Garlic (can sub pesto if you’d like), 7. Mayonnaise and Cheese mixture – this should cover the entire pie in an even layer all the way to the edge.
Bake at 375 for 30 minutes or until top is golden brown. Allow to rest for at least 15 minutes before cutting and serving.
