If you have been to our house, you have probably had Trader Joe’s Feta Caramelized Onion bites. We always have them in our freezer for a quick, delicious snack. BUT, my Trader Joe’s has been out for the last several weeks, so they have left me with no choice but to make them for myself.
This is also part one of my boujee appetizers for $12 or less series! Hosting can be expensive, so I want to provide you with some fun ideas to still give your guests a tasty, special experience without breaking the bank!
Ingredients & Price Breakdown
Puff Pastry Sheets: $4.99 – Ok I admit, I got it on sale. But it is how much I paid!!
Crumbled Feta: $5.49 – Blocked would be better, but that was out of the budget this time! And the pre-crumbled still worked great.
Onions: $1.49 for 1lb. I am using yellow onions. You could really use any combo of yellow, sweet, and white.
These are usually $4.49 for 12 bites at Trader Joe’s, which I’ll happily. pay over and over again. You will have puff pastry and feta left over, so if you are able to buy more onions and have a total all-in cost of about $13.50, you would end up with 60 bites giving you a much better value. Even if your puff pastry isn’t on sale!
Slice onions then, and caramelize low and slow with olive oil and a pinch of salt, about 3 hours. Do not rush! There are only 3 ingredients, so each one matters.
Preheat oven to 400 degrees
Thaw puff pastry for about 30 minutes, so you can work with it. Then cut into 1" squares.
Gently pull each square on each side evenly, as shown in video on instagram, to make it thinner. You want it to be about half the thickness it started as. You can roll it out thinner before you cut it, but I find it bounces back and is easier to be consistent when you thin out individually
Grease a mini muffin pan with butter, avocado oil, or other neutral oil. Place puff pastry squares into the cups, it should make 30
Into each puff pastry cup, add enough caramelized onion to fully cover the bottom, then top each cup with crumbled feta.
Cook for 15-20 minutes, until puff pastry and feta have both turned golden brown at the top.
