Italian Apple Breakfast Cake

When I took cooking classes at Podere le Olle in Umbria, Italy, each class we would make an entry that included fresh pasta as well as a delicious baked good, and this is apple cake is my favorite.

If you haven’t had a breakfast cake in Italy / Europe before, they’re not very sweet, yet still light and decadent. I have added a few optional add-ins if you want it make it a little more cake-y. But I prefer to keep it as-is and add ice cream and a sprinkle cinnamon. My favorite bite!

Italian Apple Breakfast Cake

Classic Italian breakfast cake, like I learned in Umbria

Ingredients
  

  • 3 apples About 3 cups
  • 150 g sugar
  • 2 eggs
  • 6 tbsp unsalted butter softened
  • 270 g all purpose flour
  • 8 oz whole milk
  • 16 g baking powder
  • Pinch of salt

Optional Add-Ins (not in original recipe)

  • 1 tbsp vanilla extract
  • 1 tsp cinnamon

Instructions
 

  • Preheat oven to 350 degress
  • Peel and dice apples
  • Beat eggs and sugar, then mix softened butter in using a hand mixer until smooth
  • In a separate bowl, mix flour, baking powder, and salt
  • Slowly add in flour mixture to butter mixture then add in milk and stir until well combined and the texture is like thick pancake batter.
  • Fold in apples, then add to greased or parchment paper-lined 12 inch pan
  • Sprinkle with sugar and dot with butter
  • Bake for 25 minutes at a 350 oven or until a toothpick or fork is clean
  • Enjoy as-is or with ice cream and a sprinkle of cinnamon (my favorite!)
