Ingredients
- 1 lb pasta of choice
Veggie Feta Sauce
- 2 cups grape tomatoes
- 2 cups butternut squash
- 1 red bell pepper
- 6 cloves garlic
- 1 shallot
- 8 oz feta block
- olive oil
- salt and pepper
Instructions
- Preheat oven to 425
- In an oven-safe dish, add all sauce ingredients, drizzle generously with olive oil, and season veggies lightly with salt and pepper and bake until browned, about 30 minutes.
- Cook pasta until al dente in heavily salted water, reserving about a cup of pasta water
- Blend up baked ingredients with at least 1/2 cup of pasta water until smooth.
- Add pasta into sauce and add more pasta water as needed to thin out to sauce to desired consistency
