
Oat Energy Bites

Ingredients
- 2 cups old fashioned oats I like Bob's Red Mill protein oats
- 1 cup creamy peanut butter Look for peanut butter that does not have more ingredients than just peanuts and salt if possible. I like kirkland organic peanut butter. Could sub with any other nut butter
- 1/2 cup coconut toasted
- 3/4 cup chocolate chips could do half chocolate chips, half dried fruit
- 1/4 cup honey could sub maple syrup or agave
- 1 tsp vanilla extract
- 1/4 cup chia seeds
Instructions
- Combine all ingredients in a bowl until you can easily form into a ball. If It is a little loose, add more peanut butter and/or honey.
- Roll into 1" balls, this should make 20 bites
- Chill in the fridge for at least 2 hours. Enjoy!
- Store in fridge for up to 1 week
