Thai Chopped Salad with Spicy Peanut Dressing

Whenever my body is craving raw vegetables, I gravitate towards this salad because I can load it up with all the veggies I want and drench it this cravable, delicious dressing.

I like to choose hardy vegetables like kale, cabbage, radishes, and bell peppers that won’t get soggy when dressed, so it is an easy meal prep to eat on all week long.

Ingredients
  

Spicy Peanut Dressing

  • 1/2 cup peanut butter
  • 1 oz sesame oil
  • 1/2 oz rice vinegar
  • 2 oz lime juice
  • 1.5 oz honey
  • 2 T sambal
  • 1 inch ginger
  • 3 garlic cloves
  • 1/2 oz soy sauce
  • 2 oz cold water
  • 1/2 cup cilantro

Salad Ingredients (completely customizable based on what you like!)

  • Shaved Kale
  • Shaved Cabbage
  • Shaved Bell pepper
  • Shaved Red or Sliced Green Onion
  • Shaved Radishes
  • Edamame or protein of choice

Instructions
 

  • Blend all ingredients in a blender or food processor until smooth. Adjust water & salt to desired taste and texture. Enjoy!
