Street Corn Chicken Salad

I will make chicken salad out of basically anything, and this one is always a favorite! It takes everything you love about Mexican Street Corn and mixes it with shredded chicken to make the most delicious, easy lunch or snack.

Street Corn Chicken Salad

Ingredients
  

  • 2 cups shredded cooked chicken breast
  • 1 cup corn fresh or frozen
  • 1 tsp chili powder
  • ½ tsp cumin
  • ¼ tsp smoked paprika
  • ¼ tsp black papper
  • ¼ cup cilantro chopped, stems included
  • ¼ cup red onion diced
  • ¼ cup cotija cheese
  • 1 T butter

Dressing

  • 2 T mayonnaise
  • 2 T nonfat greek yogurt
  • 1 ounce lime juice

Instructions
 

  • In a pan over medium heat, add butter. Once melted, add corn.
  • Allow to cook for a few minutes, then add spices, coating the corn.
  • Cook corn until spices are very fragrant and have become darker in color.
  • While the corn is still warm, combine with chicken, lime juice, mayonnaise, greek yogurt and salt to taste. Gently mix in cilantro, red onion, and cotija.
  • Store in the fridge and serve on a sandwich, with chips, crackers, on a salad, or eat it straight with a fork! Enjoy!
