I will make chicken salad out of basically anything, and this one is always a favorite! It takes everything you love about Mexican Street Corn and mixes it with shredded chicken to make the most delicious, easy lunch or snack.
Street Corn Chicken Salad
Your favorite flavors of elote, mixed up into chicken salad. Perfect for sandwiches, salads, and snacking!
In a pan over medium heat, add butter. Once melted, add corn.
Allow to cook for a few minutes, then add spices, coating the corn.
Cook corn until spices are very fragrant and have become darker in color.
While the corn is still warm, combine with chicken, lime juice, mayonnaise, greek yogurt and salt to taste. Gently mix in cilantro, red onion, and cotija.
Store in the fridge and serve on a sandwich, with chips, crackers, on a salad, or eat it straight with a fork! Enjoy!
