
Bang Bang Chicken Meatballs

Ingredients
Chicken Meatballs
- 1 lb ground chicken
- 2 green onions greens and whites separated
- 3 cloves garlic grated
- 1 tsp ginger root grated
- 2 tbsp mayo
- tsp salt
- 1/2 tsp black pepper freshly ground
Bang Bang Sauce
- 1/3 cup mayonnaise kewpie or other full fat mayo
- 1/3 cup sweet chili sauce
- 2 tbsp sriracha
Instructions
- Mix all meatball ingredients in a bowl until well combined, using only the whites of the green onions.
- For appetizer size, roll into 1/2 inch meatballs, then chill in the fridge. Should make about 34. (Chilling will help it keep its shape when you cook it)
- While the meatballs are chilling, make sauce by combining mayo, sweet chili sauce, and sriracha. You can add a little water to loosen to get to desired texture. Add more srirarcha for spicier, less for less spicy.
- In a stainless steel or cast iron pan, turn onto medium-high heat and coat the bottom with avocado oil or other neutral, high heat oil.
- Once pan is hot, add meatballs. Shake the pan as it cooks to help the balls keep their round shape.
- Once browned and cooked through, serve with sauce and garnish with green onion greens.
