Garlic Lemon White Bean Dip

These are part one of my boujee appetizers for $12 or less series! Hosting can be expensive, so I want to provide you with some fun ideas to still give your guests a tasty, special experience without breaking the bank!

Garlic Lemon White Bean Dip

Ingredients
  

  • 1 can navy beans or any white bean
  • 1 head garlic About 12 cloves
  • 3 filets anchovies
  • 1 tsp oil from anchovy can
  • 1 lemon
  • 1/4 cup olive oil

Instructions
 

  • Preheat oven to 400
  • In a small oven-safe dish with a lid, add garlic cloves, anchovies, anchovy oil, and olive oil. You can also cover with aluminum foil and put in oven.
  • Set a timer for 20 minutes and begin checking. You want the anchovies melted and the garlic just barely golden brown. It could take as much as 40 minutes depending on the oven, but mine was done at 20 minutes. You don't want it to burn! The garlic will become bitter.
  • Drain and rinse beans, then blend beans with roasted garlic, all of the olive oil it roasted in, and the zest and juice of one lemon. Once well combined, slowly add in 2 tbsp of ice water while blending.
  • Once desired creamy texture is achieved, taste and add salt and pepper if needed. I added about 1/2 tsp of each.
  • Serve room temperature or cold with crackers or vegetables
