House Shrimp Scampi

Ingredients
  

  • 8 cloves garlic minced
  • 1 medium shallot diced
  • 1 cup white wine or chicken stock
  • 1 T lemon zest about 1 lemon
  • 1 lemon
  • 2 T fresh parlsey
  • 2 T olive oil
  • 2 T unsalted butter
  • Salt Pepper, and Crushed Red Pepper (to taste)
  • 1 package pasta of your choice I like linguine the best, but spaghetti was what I had!

Instructions
 

  • In a large sautee pan, melt your butter and olive oil together
  • Add in shallots and garlic and sautee until fragrant
  • Add white wine, lemon zest, salt, pepper, and crushed red pepper, and cook until the wine reduces by about half
  • Add in shrimp and tomatoes and cook until shrimp just turn pink (don’t overcook the shrimp!)
  • Toss with pasta, lemon juice, and fresh parsley
  • Serve with freshly grated pecorino romano or parmigiano reggiano and more crushed red pepper
