Shrimp Cocktail Salad

If you love shrimp cocktail, you’ll love this take on shrimp salad. It takes all the flavors of shrimp cocktail and mixes it with a little mayo for an easy, refreshing meal prepped lunch or appetizer.

I was waiting all summer to make this on the beach with shrimp I bought fresh at the market, but you can just use frozen shrimp. It’s honestly just as fresh, but I had a vision and needed to experience it on a beach because I am extra!

It was just perfect!

Shrimp Cocktail Salad

Everything you love about shrimp cocktail, mixed with mayo to make a cravable salad to put on a sandwich, salad, or cracker!

Ingredients
  

  • 1 lb shrimp

Dressing

  • cup ketchup
  • 2 T horseradish adjust to spice preference
  • 1 lemon juiced
  • 10 dashes tabasco adjust to spice preference
  • ¼ cup mayonnaise
  • 1 green onion sliced (whites and greens)

Instructions
 

  • Boil shrimp in heavily salted water until cooked, about 2 minutes, remove from pot, drain and allow to cool
  • Combine all dressing ingredients in a bowl until well combined
  • Mix shrimp and dressing until shrimp is coated well. Store in the fridge and eat cold

Notes

If you don’t like strong spice, you can start with less horseradish and tabasco and add it in – but the ketchup and shrimp are both very sweet, so it really isn’t that spicy as written.
If you like celery, this would pair great with celery! But I don’t, so I didn’t add any!
