Pimento cheese and tomato is one of my favorite combinations in a sandwich, so I thought let’s make the perfect bite for a unique, easy appetizer. It only takes 3 ingredients (if you are buying your pimento cheese premade), and your guests will love it!
No waste = Two Apps!
To reduce waste, blend up inside of tomatoes with salt and serve with bread you have rubbed with garlic. Now, you have two appetizers ready to serve! You can put the tomato mixture directly onto bread if eating immediately, but I like to serve separately when hosting, so the bread doesn’t get soggy.
Pimento Cheese Stuffed Tomatoes
Just three ingredients to make an easy, unique, and crowd pleasing appetizer!
-Hollow out tomatoes, salt generously, then turn over on a paper towel to release excess moisture
-In a separate mixing bowl, combine pimento cheese and panko. The purpose of the panko is to absorb any excess moisture to help the tomato maintain its structure, so if your mixture is still a little wet, add more panko.
-Stuff tomatoes until the mixture is packed and sticking out just a bit on the top
-Drizzle olive oil to the bottom of baking dish, then add stuffed tomatoes. Make sure you pick the right size, or it will tip over like you see in the video
-Bake at 375 for 25 minutes and let sit for at least 10 minutes before eating! It will completely crumble if you don’t let it set.
